Jollof rice, a popular West African dish! Here’s a simple recipe to prepare delicious Jollof rice:


  • 1 cup of uncooked long-grain rice
  • 2 cups of water
  • 2 tablespoons of vegetable oil
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1 large tomato, chopped
  • 1 teaspoon of grated ginger
  • 1 Scotch bonnet pepper (optional), chopped (use gloves when handling)
  • 1 teaspoon of curry powder
  • 1 teaspoon of paprika
  • Salt and black pepper, to taste
  • 2 cups of tomato puree
  • 2 cups of beef or chicken broth
  • 2 tablespoons of soy sauce (optional)


  1. Rinse the rice and set aside.
  2. Heat oil in a large saucepan over medium heat. Add onion, garlic, tomato, ginger, and Scotch bonnet pepper (if using). Sauté until the vegetables are softened.
  3. Add curry powder, paprika, salt, and black pepper. Stir for 1 minute.
  4. Add tomato puree, broth, and soy sauce (if using). Stir well.
  5. Add the rice to the saucepan and stir to coat the rice with the tomato mixture.
  6. Add water and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.
  8. Serve hot, garnished with chopped fresh parsley or cilantro, if desired.


  • Use long-grain rice to prevent the rice from becoming mushy.
  • Adjust the level of spiciness to your liking by using more or less Scotch bonnet pepper.
  • You can also add protein like chicken, beef, or shrimp to the dish for added flavor.
  • Jollof rice is best served with a side of fried plantains, vegetables, or meat.
